Baking is my favourite activity, though I’ve not tried much of it in the past. I had baked just cakes couple of times earlier and did not continue with it much thereafter. I’ve not gone to any baking classes as such–just learnt a few stuffs and techniques in the YouTube and reading some cooking blogs. Thanks to YouTube and the gesture of the bloggers that we have everything just a click away. However, I want to attend a couple of professional baking sessions over the online or offline classes. Trying to make some time for that. Let’s see if I can make it some time by the end of this year.

This blog post is a recipe that I’m doing after a very long time on my blog. I’m going to share the recipe of vanilla choco chip sponge cake that I prepared for my daughter. I’ve recently bought Inalsa MasterChef OTG from Amazon and I was thinking what to prepare first. Then the idea of the vanilla choco chip sponge cake came to my mind.

NB: If you are looking for a smaller variant and has budget constraint you can go for the Inalsa 16BK variant, which is equally good.

Now let’s come to the recipe.

Ingredients

  • Maida (Refined flour) – 1½ cup
  • Baking Powder – 1½ tsp
  • Baking Soda – ½ tsp
  • Sugar – 1 cup
  • Salt – ¼ tsp
  • Egg – 1 No.
  • Melted Butter – ¼ cup
  • Milk – ¾ cup
  • Vanilla Essence – 1 tsp
  • Choco Chip – ¾ cup

Method

  1. Mix all the dry ingredients in a bowl – maida, baking powder, baking soda, sugar & salt
  2. In another bowl take the melted butter, break 1 egg and beat properly
  3. Add milk and keep on stirring to mix the milk well
  4. Add vanilla essence and mix thoroughly
  5. Now pour the wet mixture into the bowl containing dry mixture
  6. Stir the batter in the folding fashion and bring the mixture to a not-so-watery consistency
  7. Now that the mixture is ready, add the choco chips and mix (Keep some choco chips for using as topping on the batter)
  8. Grease a baking pan well with melted butter and pour the batter till the half of the pan
  9. Preheat your OTG/microwave oven at 180 degrees for 10 mins
  10. Place the baking pan in the preheated oven and bake it at 180 degrees for 15 mins
  11. Use a toothpick and prick the cake to see if it’s baked properly from inside
  12. If toothpick come out clean its done, if not then bake for another 5 mins
  13. Take it out of the oven and leave it for 30 mins to cool it down
  14. Your vanilla choco chip sponge cake is ready to be served

Expert Tips

  • You can replace the choco chips with small chopped blueberries, strawberries or tutti-fruity if you want to make a different variety of the cake.
  • Always use the bottom heating element for baking a sponge cake
